Christmas Week Menu from The Pringle Plan



Meals are quick and easy the week of Christmas as we take a break from our usual routines. We use more frozen and jarred foods to make meal prep a breeze, and change things up a bit with some of our favorite convenience foods like frozen veggie burgers and burritos, and finger foods for Christmas lunch so we can nibble away in front of the tv while we watch the Disney Parade - which for 2020 wasn't much of a parade:)

Wed/Thurs
Morning Snack - Blueberries with Pumpkin Seeds or Almonds 

Lunch - Black Beans, Green Bell Peppers, and Artichoke Hearts served on a bed of Baby Leaf Spinach, dressed with Balsamic Vinegar and Extra Virgin Olive Oil

Dinner - Mushroom Burgers, Tomato, and Lettuce on Whole Wheat Rolls, with Brussel Sprouts and Carrots

Christmas Meals
Fri/Sat
Breakfast - Oatmeal Pancakes with a drizzle of Pure Maple Syrup and topped with Pumpkin Seeds and Strawberries

Lunch - Smoked Salmon on Rice Crackers and Humus with Red Bell Slices and Cucumber Wedges; Cubed Cantaloupe on the side

Dinner - Vegetable Lasagna and a heated frozen roll, with a salad of Cucumbers and Grape Tomatoes

Sun/Mon
Lunch - Chopped Celery and Scallions, Red Bell Slices, Grape Tomatoes, Orange Slices, and Sunflower Seeds, topped with Olive Oil Mayonnaise; served with Rye Bread
 
Dinner - Dairy-Free Burritos, Gary's Spanish Rice, Cucumbers and Tomato

Fall Menu Week #4 From The Pringle Plan


Lunch - Walnuts, Carrots, and Grape Tomatoes served on a bed of Romaine lettuce and dressed with Lemon Juice, a slice of home made Rye Bread on the side

This is the fourth week of my fall menu plan. I have been taking photos of some of our meals and posting them to both my website, ThePringlePlan.com, and to Pinterest to make up for the lack of photos in my recent book, The Pringle Plan For Quality Nutrition. It is just too expensive to include photos in the book itself. This way I can show more photos while keeping my book price down, just $9.95!

Dinner - Fish, served on a bed of mixed Vegetables, with Sweet Potato oven fries

From time to time, you may notice my photos don't match exactly with the menu. That is because I make substitutions whenever necessary. For example, in the photo above you will notice a white fish, Tilapia, while the menu called for Wild Caught Salmon. That is because I had run out of salmon, so I made a simple substitution rather than make an extra trip to the grocery store. In the last photo, I substituted a jar of pasta sauce for the tomatoes, because the tomatoes were not looking too healthy. I find remaining flexible makes life run smoother, while still keeping me on track eating high-quality-nutrition foods, also called a Nutritarian eating style.

Weekend Breakfast - Oatmeal Pancakes with a drizzle of pure Maple Syrup, topped with unsweetened Applesauce, Raisins, and Raw Pecans

You may have noticed we are still eating outside on the balcony. Yes - it is November in Connecticut and we are still having some warm days. 2020 has been an unusual year!

Lunch - A bed of Arugula, topped with microwaved Asparagus, Chic Peas, and Avocado, and dressed with a dollop of Chipotle Mayonnaise; Rye Bread on the side 

Tonight's Pizza fresh out of the oven!

Dinner - A slice of Vegetable Pizza (Onion, Green Bell Peppers and Garlic), sprinkled with Nutritional Yeast; and served with a Romaine and Celery Salad, topped with Wild Soil Raw Almonds

Snack - Frozen Mango with Raw Pecans for me, Pumpkin Seeds for Gary

Lunch - Cannellini Beans, Artichoke Hearts, Scallions, and Tomato on a bed of Romaine Lettuce and dressed with Apple Cider Vinegar and Olive Oil; Pumpkin Bread on the side

Dinner - Chic Pea Pasta with a sauce of Pesto, Spaghetti Sauce, Asparagus, Artichoke Hearts, Garlic, and a sprinkle of Nutritional Yeast

Fall Menu Week #3 From The Pringle Plan

Week #3 of my Fall Menu Plan is quick and easy! Take a look!

Lunch - Pinto Beans, Artichoke Hearts, and Tomato on a bed of Romaine; dressed with Lemon Juice, a splash of Olive Oil and Herbs

Dinner - Wild Caught Tuna, Peppers and Summer Squash, and Amaranth, with a bowl of salad greens on the side

Lunch - Sunflower Seeds, Beets, Roasted Red Peppers, on a bed of Baby Leaf Spinach, topped with Nutritional Yeast and dressed with Apple Cider Vinegar and Extra Virgin Olive Oil; Rye Toast spread with Organic Jam

Dinner - Tempeh, Onion, Eggplant, Mushrooms, and Roasted Sweet Potatoes

Weekend Breakfast - Egg and Mushroom Scramble, Cantaloupe, and Rye Toast

Dinner - Black Beans, Fennel, Scallions, Peppers, and Quinoa

Lunch - Black Beans, Avocado, Scallions, and Grape Tomatoes on a bed of home-grown lettuce, dressed with Fresh Lemon Juice and served with home-made Rye Bread on the side
Dinner - Shrimp, Mushrooms, Onions, and Snap Peas with Red Bliss Potatoes

Fall Condo Gardening


I love gardening on my balcony! I went with super easy this fall. It's simple, just drop a plant, plastic pot and all, into a container, and water every day or two.

This one is suppose to be orange, but the buds are looking pretty red to me

Ah! Now I see the deep orange beginning to appear

Early October and we still have lots of buds waiting to open

Each day the flowers fill in a little more


October 10th - The purple buds are beginning to bloom

Just a few more buds to open and we'll be in full bloom!

The orange mum is now in full bloom...

...and so is the red one!


The purple mum is blooming way behind the other three. From this view, it looks a little more red than purple. Maybe it was mislabeled?

It's the third week of October, and the purple mum is revealing itself to be a shade of maroon-purple
I think my favorite is this orange beauty, but I've really enjoyed the variety of colors and seeing them each bloom at different times.

We've had one night of frost so far, but I'm certain there will be more to come soon. By November, it will be time to put my balcony garden to rest and begin planning for spring!

Off-Kilter Tales of Norwichtown - Walktober 2019

Fall 2020 has me staying home an awful lot. I sure do miss the Walktober events I attended last year. Here is a look back at one of those walks - just in time for Halloween!

Another week, another Walktober event! I'm loving these walks and learning something new about my new hometown with each walk. A few days before Halloween, this walk took place in historic Norwichtown. Participants gathered in front of the Norwich Historical Society, directly across the street from the Norwichtown Green, which is quickly becoming one of my favorite places.

Historic homes surround the green
Zach pointed out many of the homes surrounding the Norwichtown Green. Some are historically significant, some may be haunted! Ghosts have been seen, noises heard, and strange events happen. This is the area of town where Norwich's founding fathers built their homes. Once an area where the jail, courthouse and post office stood, the green was also the place where people gathered to hear news, make speeches, and encouraged each other to fight oppression of all kinds. For Zack, the green was the place he played with his friends, and tossed Frisbees in his youth.

A trail behind the Congregational Church leads to a tranquil spot on top of the ledge - we took that hike after the tour

Next, on to the cemetery...

...which abuts Loethorpe Meadows

The grave of Benedict Arnold's mother remains, though the graves of his father and brother were dug up and their bodies thrown into the river when Benedict was found to be a traitor. Benedict Arnold died and was buried in London, England.

Back on the street, we stopped at Samuel Huntington's home

... it's Mohegan Chief Uncas! A nod to the fact that this land once belonged to the Mohegan Nation, before Chief Uncas sold a nine-mile square to settlers who founded the town of Norwich

Today, some people still refuse to drive along Huntington Ave., after several sightings of a man floating inches above the ground, in the middle of the road.

With the official tour over, we decided to take a hike up the hill behind the Congregational Church.

I don't look anything like this a year later. These days I could pass for one of the ghosts haunting the Norwichtown green. I won't show you since I don't want to frighten you too much. Let's just say, I sure am missing my nice short pre-covid-19 haircut!
