Meals are quick and easy the week of Christmas as we take a break from our usual routines. We use more frozen and jarred foods to make meal prep a breeze, and change things up a bit with some of our favorite convenience foods like frozen veggie burgers and burritos, and finger foods for Christmas lunch so we can nibble away in front of the tv while we watch the Disney Parade - which for 2020 wasn't much of a parade:)
Wed/Thurs
Morning Snack - Blueberries with Pumpkin Seeds or Almonds Christmas Meals
Fri/Sat
Breakfast - Oatmeal Pancakes with a drizzle of Pure Maple Syrup and topped with Pumpkin Seeds and Strawberries

Lunch - Smoked Salmon on Rice Crackers and Humus with Red Bell Slices and Cucumber Wedges; Cubed Cantaloupe on the side
Sun/Mon
Lunch - Chopped Celery and Scallions, Red Bell Slices, Grape Tomatoes, Orange Slices, and Sunflower Seeds, topped with Olive Oil Mayonnaise; served with Rye Bread
Dinner - Dairy-Free Burritos, Gary's Spanish Rice, Cucumbers and Tomato
